That is a good question, I would like to know too! Its never been too clear. The only differences I've actually SEEN have been when platformed for SQL7. And that is only from a SQL effeciency perspective, scalability ect...
The only onther place I can think of that may offer a little more description is:

By what I have found asking a dew people, Enterprise is more robust as far as the number of processors it can handle and the amount of memory. You can tell by going to the start button and looking at the logo on the side...If you have Enterprise it will say
WINDOWS NT Server Enterprise...

Yes the big difference is that NT Enterprise just has more scalability and being able to handle much more of a work load that the standard edition of NT. It was meant for Enterprise businesses with being able to build a large amount of systems while being able to handle it all. Yes more processor being able to support 32 and ram also. Plus it does have more functionality internally to accomplish more tasks than the Standard edition. Hope this helps out.

Multiprocessor support is the biggest.

Capacity limits are higher for Enterprise than Standard...

Other apps require Enterprise only, like Microsoft clustering...
