To do a proper backup of Exchange Server I would suggest that you look to a professional backup package such as Veritas Backup Exec. With this you get the basic backup package and can add on extras such as:-Multi-server backups which means you can backup files on other servers in the same job, Exchange backup which backs up the individual mailboxes as well as the indexes ans SQL backup for use when SQL Server in use.

This approach is much better as the backup system bolts itself on to Exchange to form a proper interface between the two applications.

It is also recommended to do an 'offline' backup of the databases as well (priv, pub, and dir) as you may not be able to do an 'online' restore if your problem has caused the Exchange services to not be able to start.
