Outlook screwed up

I just started using outlook 2000, instead of Outlook express. Im trying to make it fit my needs. lets just say its all messed up. In my inbox each email has a little + next to it, when clicked it opens another, and so on, until I can finally see the piece of mail, how do you get rid of that? Another thing when I click on a folder in my folder list, it auto expands all emails in that folder in blue. how do you change that? Any help would be great!
