Backing up assistance needed

I'm working with several computers that run Windows 3.1 w/DOS 6.2 that are all tied into a network. We're upgrading and need to back up files. besides going into the file manager and conducting a search using wildcards, is there an easier way to find certain types of files that might be scattered in many different directories? I've tried going to a DOS command to use switches but can't seem to get that to search all the sub directories. The command I've used is (copy *.doc C:\backup /s) and I get invalid switch error. I have numerous computers to back up and would really prefer not to have to use the file manager to ensure I'm finding and copying every valuable file type regardless of location on the hard drive. I'm open to suggestions. Thanks
