When I want to setup a new backup job using veritas 9.1. I do not see my mapped drives listed when i setup the backup job. I only see local drives. But if I go to My Computer I see my three mapped network drives. Any ideas why this would happen? thanks

I've never used Veritas but likely you can't backup network drives with it. I'm betting there's an add-on module that allows you to do so. But I'll also bet if there is, it'll cost you more money.
What is the OS running on the PC's/Servers that are the targets of the mapped drives? If they're Windows 2000/2003 or XP then you could use the built in ntbackup to do backups locally on those PC's and copy it over to your main backup PC/Server to be included in it's backup set. This could all be done in a batch file that you then schedule to run prior to the backup on the main backup unit.
