netbios enabled over tcp/ip? [tcp/ip properties]
what dns server is the workstation pointed to? Is it the ip of the 2003 test server? If not does your dns server contain a host/ptr entries for the test server?

Look at the properties of the shares than. Are they shared with no restrictions?
What happened between the time you saw them and they disappeared?

sounds like file and print sharing when aways at the same time. Re-enable and reshare then you should be fine.
