I still have not got my head around server licensing. Can someone tell me which option is best. One server with about 10 clients, would per server or per seat is the best licensing option.

You have to read the MS site's rules on that to decide. There are three ways you can use cal's actually.
The basic things you may need to know would be the types of applications you wish to serve. The way users logon and access resources. Any plans to increase or move system. Also maybe how groups work and how you want policies to be enforced. I think that is on technet. If not see the 70-29x series of books. Pretty sure it is the first one.
