I'm wondering how it is possible to have a computer or server (in this case) connected to the LAN but not able to connect to the Internet. I'd like to prevent Internet access from this server but don't know how when it's on a LAN that is connected to a cable modem.

You don't want to allow external (ie: internet) access to the server, or, you don't want the server to access the internet?
If the latter, simply do not allow users to log on to the server locally and use it like a PC. This is standard operating procedure in industry anyhow.....to not allow people to use a server like a PC.
If the former, you could put it in a separate subnet and make a static route in your router to go from the LAN to the server. Or, you could leave it in the same subnet, configure it's built in Windows firewall to only allow access to the server from LAN clients.

set the servers ip as static and don't put an entry in for gateway. Server is on the lan but has no internet.
