Print Server on two networks

I'm attempting to set up a print server attached to two different networks using two NICs. I understand that I cannot have default gateways on both networks and need to add a persistent route that will connect me to the second network. My question is, which network should I use as my default gateway and which should I add to the table? If I set the default gateway to the customer network and add a route to ours, will I have problems remotely managing the server?
