Hi,
I have designed my setup as follows :Internet > SMTP relay subsystem for Inbound e-mails from Internet > Firewall > Perimeter Network (All servers here like Exchange, Front-End, ISA server) > Firewall > Back-End servers.
Outgoing e-mails is from separate SMART Host using IIS.
Incoming via separate smtp relay system.I do have thorough understanding of Exchange. However, I lag on security part.
could anyone guide how to encrypt all Incoming and Outgoing e-mails to Internet domains ?

Most internet email services don't allow relaying email anymore due to spammers/hackers.

I am relaying outgoing using my own smart host.
How do i encrypt outgoing e-mails?e..g: let's say i sent an e-mail from my enterprise exchange to my rediff account.
can it be sent encrypted?

If both ends can do ipsec you can secure the transmission.
