I am new to Windows Server 2003. I have setup one machine to learn on. On it, I have defined a Domain Controller, DNS Server, Mail Server, IIS, Print Server, File Server. That's a lot for one machine but it's just for testing/learning. Can I host multiple e-mail Domains on this one machine?

yes

Just install the pop3 service, then simply add more domains.
