Is it possible to run an Email Server within LAN? Let says I don't have Internet connection and I want to run an email server that can ony send and receive email within the Internal Network (LAN).

LOL, install it? There's nothing special about how to do this over a normal install. In fact, it's easier since you don't need to worry about how to make sure the Exchange server can get mail out with proper internet name resolution, having an MX record on the net configured, etc.
