Is it possible to change the subnet for a DHCP server after it is built and authorized? The option is grayed out.

No it's not, a subnet mask is something that never changes so there's no real reason to be able to edit it.
If you really need to change it it's only a 2 minute job to delete the scoop and recreate it with the correct subnet. Don't forget to authorise it after!
