Isn't this a setting in Outlooks user settings and not Exchange?
Give a person a fish, they eat for a day. Suggest they internet search and they learn a skill for a lifetime.

No. The name is taken from Active Directory and Exchange/Outlook take it from there. You'll need to change the name there, or enable the "send as" permission to send the mail as a different user with the name you want.
