E-mails on MS Exchange server 2003

Where (folder/filepath) can I find the emails for all the users on this server?

You can't. Exchange doesn't work that way. They are kept in the databases.

where you said your users are running OE as the email client?

This is possible but not advised. The M drive mapping was removed in exchange 2003. Exchange 2000 supports this feature out of the box. If you want to recreate the mapping follow this article: http://support.microsoft.com/kb/821836
This will then allow you to see the contents in a MIME format. Again this is not recommeded as it AV`s can corrupt your mail store as the scanner will simply see the new drive mapping as another file.
