I am trying to set up folder redirection with roaming profiles. If on the server i go to start > run > gpedit.msc then i go user config > windows settings there is not option for folder redirection. Am I missing something here?

Thanks,
Josh

You are indeed. Folder redirection settings will be in a GPO and not the local Security Policy. You could use the default domain GPO, but I advise against it. Better to create a new OU (or OU's) with any necessary sub OU's under it. Then create a GPO on the main OU and apply your settings there.
