Hey everyone. Not really a server question but not
sure where to ask this. Right now my domain is hosted
with godaddy and my email is on my exchange server
so my mx records point to my server. I would like to
keep some users on my server and then do a hosted
exchange for a few others. Is it possible to have
different mail servers for different users? So
user1@company.com goes to one server but
user2@company.com goes to another or is it all or
nothing? Thanks!

externally you can have a backup mail server solution dictated by a preferred MX and a secondary MX given by costing...however, since mail routing is done at the domain level, they all have to be hosted in the same organization. You can set up different mailbox servers in exchange and exchange does the redirection for their mailbox location, but unless there's a 3rd party that can redirect a user's mailbox to another organization, its not possible.
