Hi,
Our company is currently running offline folder synchronization but as we are getting bigger, I am noticing that it is a very heavy load on the server...is there a way that I would be able to automate doing incremental backups of each user's My Documents and Desktop to the server each week or day doesn't matter and just have drive mappings on their machines to the server in order to access their files? The file synchronization takes too long and is clogging up the server...thanks in advance.

You might try looking into folder redirection instead. You could easily redirect their My Documents and Desktop folder and just leave off the file synch. I'd also set up a Home Directory for them which will map autoamtically upon login (then just redirect My Documents to the Home Directory folder) For desktops at least (laptops I'd leave file synch in place).
As far as backing things up, you have to ask yourself why you're doing the synch in the first place. What if a machine dies before the latest copy takes place? Is the data that vital that you'll have some angry users?
Just some ideas, and they may or may not work as a good solution in your environment..
