How do I change the dns servers name or reconfigure the dns server name? Can I uninstall dns?

You would have to demote it from being a DC using dcpromo.exe then change the name and then promote it back to being a DC again.

Still learning here...

Perhaps creating an Alias for the server name would suffice?
