I have an old Dell OptiPlex GXa (PII 233 MHz, 64 MB) that I will be using as a fax server. I need it to be very stable, as I don't want to have to maintain it. I'd like to put 2000 Advanced Server on it, but am concerned that the machine might be too underpowered. Would 2000 Pro be better choice (in terms of stability)?

The good news is, you can get it to run on that PC if you add more RAM. I wouldn't try it on less than 128 MB's of RAM. I once installed Pro on a Pentium 166 with 128 MB's of RAM. It ran, slowly, but it ran.

I have one pc running 2000 Server on a PII 400 with 128MB of RAM. If it isn't doing much more, it will run fine. But I agree with Curt that you'll need more RAM. 128 would work but if you can swing it, you'd be better off with 256MBs.
