Change your DNS server address on your XP machines to the 2000 Servers address. (IF your 2000 Server is set up as your DNS) If the DNS server Address listed in your XP machine configuration points to an address diffrent than your DNS server it will take a full 10 minutes to log in.
Example of my setup:
My server is also my DNS server:
IP address is 192.168.16.2
My router is also my default gateway:
IP address is 192.168.16.1
MY workstations are set up with hard IP addresses since I do not enable a DHCP server. (I have a small 12 station network)
Example: IP address 192.168.16.?? with a default gateway of i92.168.16.1 and a DNS address of my server or 192.168.16.2
Obviously you may need to change your IP addresses for your own situation.
Remember Your server should always have a fixed or hard IP address even if you use a DHCP Server. If your Server is set up as your DNS Server also, then you just point your Workstaions to your Server (DNS Server) IP address. This is done through your TCP/IP properties tab under loacal area connection (LAN) found under network connections.

Just reread your original message. Since you have two NICs, I believe that one NIC is addressed as your connection to your Cable\DSL router so that your server is enabled with Internet sharing service/firewall. Your other NIC connects to a switch or hub and then to your workstations. Your server is most likely set up as a DNS server as well and which ever NIC is set up as the DNS server should be the address that you enter for your DNS server on your workstations.

Also how big is the profile for the account you're using to logon XP?

Frequently slow logon etc. can be due In part) to junk of one sort or another - as in temp and temp-internet folder/files... etc? A not infrequent issue where I work... many users have humungous temp/temp-internet folder contents.
