This is rather Software Question but I always get good advice here so I dare to ask
it here...

I want to know if we can create documents in portable document format
(pdf) in some editor. As per my knowledge Adobe Acrobat converts any
document to pdf format but we cannot directly write pdf files like
we do microsoft word document... just keep on typing and saving in
doc format. Is it possible to write pdf in this "on the fly" fashion?
I want to use pdf format extensively... any pointers which is appropriate
software for this?
I also want to scan some paper documents to pdf format.
Adobe has wide range of products I don't know which is suitable for me.

Do you need to create new document and translate existing files document in PDF? Or you need to SCAN hard copy and convert it to a PDF file??

Is it for internal usage or to be fax/emailed to business partner?

If you Install the Adobe Acrobat distiller (the program that writes PDF's) it will put icons in Word and Excel. Then just go into Word, create your document and click on the Acrobat icon. It will create the .pdf from the Word document automaticly.

The Acrobat distiller also adds a custom "printer", so you can print from any program directly to a pdf file.

I need to create new documents as well as
convert some existing files document in PDF.
Also I need to SCAN hard copy and convert it to a PDF file. So it is all possible combinations.
Those are to be fax/emailed to business partner.

Use Adobe Acrobat (including distiller) to effectively 'print' to pdf format from Word, etc.. and to create pdf from scans. Check it out here.

As said mystojay and col and bob, Adobe offer some products such as Distiller and capture to convert existing MS-Word files.

But if you need to scan hard copy or signed documents, will need to use the computer where the scanner is attached and use the software to convert the acquired scan to a pdf file.... and finaly send it by email!

Distiller and Capture software are not freeware, but very expensive (for each workstation if legaly installed)

A different way is to use a digital sender. It's a standalone scanner connected on the network that send document by fax or email in PDF(acrobat) or TIFF(image) formats. HP offer 2 models on their website www.hp.com

I am currently testing the HP 8100c (hewlett packard) and have very good results. It take 10 seconds to scan a document and have a PDF document sent to your business partners. It doesnt need any computer or software to work.

I've used distiller and acrobat with great success but in the case that you are on a budget, try out docucom by ZEON (I'm pretty sure on the names) it too adds a "printer" to which you can make a pdf from any format. scan in a page if you wish and print it into a pdf from some image processing software. Anyways Adobe makes fine products but, there are alternatives.

And to answer the question you really asked. No there is no real way to type right into a pdf file. They are generally made from post script files which come from other programs. You can add text to an existing pdf through Acrobat (not the reader) but you need something to start with.
