want to move a hundred user's home folders to another server, I seem to remember in NT4 user manger you could just highlight your selections and do it one go but you don't seem to be able to do this in 2k AD I only wish to change the server name the profile path and mapped drive will remain the same e.g. u:\\servername\home\jbloggs

If you've used the Home Folder attribute for each users properties, then you'll have to edit the directory and replace the \\original-server-path with the \\new-server-path
If you've used VBS scripting to assign objects you can just change the \\server-path in the VBS script
This doesn't move the physical folder, it points actvie directory paths to the new location.
You can automate the physical folder move with vbs or bat script even, but the time to write the script is lengthy. But the script can reatin rights and permissions, where as a manual cut/paste won't.
