is there a way to disable the delete function to stop and accidental deletion of files and folders over a network drives

If the network drives are formatted NTFS, the easiest thing to do is just revoke/deny Delete on the files/folders.

been trying to find a way to stop the delete... Any chance you could point me in the right direction. ie: group polict or elsewhere..

If users have Modify, they'll be able to delete. Hopefully, you have a reliable backup system.

engage volume shadow copy. We do VS three times a day and its easy to restore a deleted file.
