We've got a Windows 2000 Server that is joined to a domain that no longer exists (company merger), but it's still running a bunch of apps and services via the domain admin profile.

Unfortunately, we had to let go of one of the key employees that worked on this server and we need to change the password for the domain admin.

Is there any way to locally change the password of a domain profile without being connected to the domain?

We already tried ERD Commander

While logged in with the account, Ctrl-Alt-Del Change password. The account is probably using a cached login since the Domain is no longer available. I'm not sure that if you change the password it will then login successfully since the Domain is no longer available.

Why not just create a new local admin and copy the Domain profile to it, then delete the old profile?

Life's more painless for the brainless.
