I am sorry i can't help out much but my experience may make you feel better.
I have a HP Scanjet 4100C, I was unable to install the software for this scanner claiming it was incompatible with NT. Well i had to download new software from HP's homepage, at leats i could install it, but the software didn't work untill i fiddled around and saw a .reg file in the /SCANJET directory and double clicked and added it into the registry, then the software finally worked, though stopped working after a while (Froze every time i tried to start it).
My workaround is a Win2K Win98 dual boot, cos i know my scanner works fine in Win98.However Win2K should have native drivers for your scanner which should enable Windows imaging or whatever to handle scanning, i know it isn't as good as the software that comes with your scanner, but it is a possible workaround.

Greets, You need to go into your root directory (C:\WINNT\System32 don't qutoe me)and give permissions to users for the files that the Canoscan software put there. Not sure on the specific files, but you can sort by date in the directory and see what files were created about the time you installed
