So what does logging an IP do for me, anyway? I mean, I can look it up, like at whois, but how do I know anything useful about who that IP is registered to? Obviously, there's no way of finding out that Frank Crank in St. Louis, MO visited my site, right?

You can find out a great deal of information based upon ID logging. Whether it is useful to you is another matter.
If it is an ecommerce site they can use the IP logging to find out what regions are using their site. That will in turn help them to decide where to best spend their advertising dollars.
The IP info can be very useful to track malicious activity. If you had a site that hosts information such as stock totals you might notice that a particular IP has usage numbers that are far and above any other user. That might indicate someone trying to use an automated script to try and break in or it might indicate someone who has their own site which is getting the data through scree-scraping of your site to display on thier site.
These are just a few examples.
