Need help converting chinese characters!

Hello, I'll preface this by saying I'm not Chinese nor can I read it. I have a document that was translated and provided in Chinese, which I need to insert into a PDF via FPDF. I found an extension for fpdf that apparently works, here:

However in the examples they give, the text they are converting is in some sort of jibberish, which then gets "encoded?" to the correct Chinese characters.
For example, they put this text into a Write() function:
²{®É®ð·Å 18 C Àã«× 83 %

and it gives them the Chinese characters they want (assuming they show here):
現時氣溫 18 C 濕度 83 %

whatever that means. My problem is that I already have the Chinese characters, and when I put them into a Write() function, they convert to different Chinese characters. My question, using each individual string of Chinese characters I have, how can I get from:
現時氣溫 18 C 濕度 83 %
back to this:
²{®É®ð·Å 18 C Àã«× 83 %
so that I can use it in the function to get the original Chinese characters back? Am I going about this completely wrong? Spent a bunch of time playing with various back and forth encodings online and have had no luck. Any help would be hugely appreciated! Thanks!
