Hi
I'm brand new to selling online.
I have a site with 1and1.co.uk hosting. I need to put online payments onto my website.
I've read thru the messages on this site and searches but I'm very confused as to where to start and what i actually need to do to guarantee secure payments.
It will be (hopefully) a simple process of paying a set fee for each booking. No shopping cart etc.. is needed at this point.

Strange method. Can you be more specific with what you are trying to achieve?
What sorts of service do you wish to offer?
Is it a recurring payment?
What sorts of payment do you accept?
Most payment aren't exactly simple and can be quite complicated.
These questions need to be answered before I can help.

Ideally i would like a customer to be able to pay by credit card - not PayPal.
1. One off payments only.
2. We offer theatre productions to schools - they need to book online.Do you kmow how i can do this or at least where to start?

Despite you not wanting paypal, I still do advise using PayPal. Because it -can- accept credit cardpayments.
Here are a few options if you don't like paypal:
A) Contact your bank, and see if they can offer any methods of accepting online payments. This is because banks tend not to take handling fees if you get this service from them.
B) You need a third party processing company, like:
http://www.ibill.com
http://www.multicards.com/
Note that though they allow you to accept credit card payments, they will charge you for commission / administrative / handling / whatever they want to call it fees. A simple search on Google for "Internet Billing" will allow you to find many results.C) If you are advanced enough, you can program your own payment system using scripts.
D) This website here:

Has lots of pre-made scripts. Check for "Internet Billing" and you might be able to find services, or scripts that you can add to your website to accept payments.Hope this helps.
