Unix offers a more secure server environment.
Obviously NT has a superior GUI (though some may argue with me) and is more easily configured because of that GUI.
Unix flavors tend to have less downtime, but have a higher learning curve. Unix works very well as a server. NT still has a few areas to catch up, many of which are addressed in 2000.
But the best way to decide is to do field research and that means installing one or the other. In some areas NT outperforms Linux and vice versa.
You must determine your reqirements list before anyone can help you. If you want a good desktop environment, I would suggest NT right now. If you don't mind working in a commandline and editing scripts for the greater part of your time, then Unix isn't a bad idea.

Advantages:
Security: UNIX is very secure, if you have it setup correctly, it can be almost impossible to crack. Windows NT is very hackable, any script kiddy with a little bugger can break into NT.
Stability: I've never had any type of Unix crash on me. Not Solaris, not IRIX, or even Linux. The only things that crash are badly made programs. Unix has been under development for over thirty years now, most all bugs have been removed. You can kiss good bye to the Blue Screen of Death that you get in NT. Most of this is also do to its superior managment of memory, NT has better memory managment than 95 and 98, but still isn't anywhere as good as Unix.
Power: Unix is extremely powerfull. You can do pretty much anything you can imagine. You can customize your own shell easily, you can do pipes, shell scipts, things NT just isn't capable of. While Unix hardware (Sun, SGI, etc) is often more expensive, you get what you pay for. I have a Silicon Graphics Indy running IRIX 6.2 and I'm very happy with it. I installed Linux on my PC (dual boot with Windows) and now I only boot into Windows to watch DVDs.
Generally, all of the great things about NT are all in the areas having to do with the number of people who use it. NT only has strength in number, but sometimes that's all it needs to prevail. Windows in general is much easier to use, but Linux coming up very close behind. Mandrake Linux is just about as easy to install as Windows is, and definaly as easy to use with all the new system control GUIs out there now. Get Mandrake Linux with KDE to find out the hype. And also with ease of use, take a look at Mac OS X, that is actually NeXTSTEP (an almost dead Unix OS) with an easy to use GUI. Now my grandmother can have the power of Unix along with the ease of use of the Mac OS. Unix rocks.
