edit /etc/inetsvc to disable basic services (telnet, finger etc). Also, you may want to comment out some of the services in /etc/services to stop them from running
Although I can't stress how much a firewall makes for a much better and more flexible option. If you can use a seperate hardware firewall then it'd be easier as you wouldn't have to restart anything on the solaris box should you need to change or enable anything again.
