If I am running an Exchange server I know I have to forward POP port 110 requests from my Linksys router to my Exchange server to receive email, but why forward SMTP port 25 requests to my Exchange server from my Linksys router when SMTP is used to send emails ??

If 25 is used to send on the sending PC then 25 is used to recieve in exchange.
