McAfee protected server-stop emails

Hi there
We have a small network of 5 PC's and a Dell server using MS Windows Server 2000 5.0 SP4
McAffee Virus Scan Enterprise 7.1.0
MS Group Shield Exchange

This does a great jobs of stripping out the 800 emails we get with viruses each day! However it still allows the message through to our inboxes, having taken the virus out and replacing with a text doc called:
Replaced Infected File.txt

The sender and title on the message is as sent by sender, so cant set a rule to send these to delete on that basis.

How do I stop them coming through to our inboxes or go straight to delete. Are prepared to risk losing some genuine emails. I have tried rules but struggle and played with McAffee. Any advice greatly appreciated, as am pulling hair out!!
