Files Access Monitoring

The organisation I work for demands that the IT department has full control of the servers and also full access to information on the servers.
The problem I have as head of the IT department is that I need to cover the backs of both myself and the guys that work for me. It very easy for someone to point fingers at the IT department if files are deleted. It can also therefore be assumed that me or my guys can also view finacial and management inforamtion. It is this that I am more concerned with as deleted files can always be recovered from the backup.
Does any one know of any software that can allow me to see at a glance and also create reports of file access on my servers.

Well, with many Windows-based servers, you can view, change File and Folder Audit settings. Your best bet for info is Microsoft if you have Windows-based servers.
