Is there any good reference on MFC programming for exporting an existing file to a JPEG format? I want to export a .dat file as JPEG so I can see the wave anywhere I want.

A .dat file contains information that represents data (as the .dat extension implies). This information is usually interpreted and then displayed by a specific program. This is NOT an image file to be exported to other formats.
