vCalendar entries are coming into my Outlook as plain text, such as this:

VCalendar files are indeed text. Microsoft's recommendation if they don't come in as attachments, is to copy and paste the text into a new Contact or Calendar entry.
What email client is the sender using?

The sender is using Outlook 2003, receiver is on Outlook 2002 - I have tried to copy and paste into a new Calendar form - it does not work for me (unless I am pasting in the wrong place)????

Sorry, wrong verbage - that's what I'm doing - selecting the vCalendar text, copying it, going to "New" under Calendar, clicking in Subject, pasting - it won't work that way - am I doing it wrong?
