In Outlook 2007 - I've set rules to every time I receive emails from 'Joe', they go to 'Joe's' Folder. However, there is the same email in my inbox and Joe's folder. Any help to cut out this annoying redundancy would be appreciated.

Are you sure you have only one rule for this sender (or that doesn't conflict with another rule,) and that you've configured Outlook to move the item and not copy it?
