I have currently got my hotmail account e-mails being picked up in outlook 2003, is there any way to automatically get them to be forwarded automatically to my default account which is a gmail account on outlook?

So, you receive your Hotmail email through Outlook and you want to then forward those emails to your Gmail account so you can download them again in Outlook? I don't understand that logic, but hey to each his own.
You just need to create a mail rule. In the criteria you want it to filter by account and select the Hotmail account and then set upt he forward. I think the option is located under Tools<Mail rules.
