I just upgraded to Office 2007, on my 2003 I had it set up to auto capitalize the i.
How do I do this with this new interface of 2007?

Stolen without permission from:

****Begin Included Text ****

To customize AutoCorrect in Word 2007, follow these steps:

1. Click the Office button
2. Select Word Options
3. Click Proofing in the left pane
4. Click the AutoCorrect Options button
5. Select the AutoCorrect tab
6. In the box labeled Replace type the abbreviation
7. In the box labeled With enter the full text
8. Click Add
9. Click OK

****End Included Text ****

In your case, enter i in the Replace field, and I in the With field.

Additional Tip - If you ever want to undo an AutoCorrect, such as if you actually want a standalone i, simply hit Ctrl-Z after the AutoCorrection has been done and it will revert to the text that was originally typed in.

My 2007 automatically corrects a standalone I.
