I have a table set in word 2003, I wish to input text within this, my problem is that I need the table borders to remain fixed, i.e (only the amount of text that is typed fits )

I'm not sure if each cell will contain the same amount of text, but you can format the table to Fixed Column Width and set to Auto, or set a specific width for the columns.
There's also two Auto-Fit options: Auto-Fit to Contents, and Auto-Fit to Window.
Not sure which is the option you're actually looking for.

And just to expand a bit on Jen's suggestion, if you use Autofit to specify the width, under AutoFit behavior, select Fixed column width and type a value or use the nudge buttons to specify the desired width for each column which will keep your overall table with the same.
