I have a multi page document. I would like to have my last name and a page number shown in the header of each page EXCLUDING the first page. I know how do insert a header and such, but how do I make it only appear on page 2 and later?

Use a section break. You can make separate header-footers for different sections. Click on "Insert" at the top and then select Section Break choose "Next page". Then click in the next page and insert header and footer.

That unfortunately makes an odd break in the text of the document. I figured out how to do it though. In the "page setup" there is an option for different first page header.
