How to copy a Documents

Hello , I have Epson 1250 and have to scan some documents and send per e/mail to Germany and God knows how to get about it .
I'm a completely greenhorn doing this and someone please help me ,or which web-page is there to help me please ?
When I click Epson Smart Panel , I get .. copy/scan to e-mail/scan to OCR/photo print/scan to applications/scan creativity/scan web/scan file.
After I placed the documents into the EPSON , can I store the documents in works and copy and paste into e/mail .
Any help would be greatly appreciated,

Scan your documents to OCR and when done you should have the option to put them into MS Word. Then just treat them as a you would a word document.
