What's a good program to use with a scanner for editing/adding text to a scanned doc?

To edit a scanned document you have to convert it from a graphic file to a document file. OCR software like Omnipage will do it for you. The accuracy of the conversion will depend on the quality of the scan and the OCR software. OCR software are frequently supplied with the scanner.
