I'm wondering if there's any way to export data that is being emailed to me, into an Excel spreadsheet, or Access database?

What data? Email attachments? If so, what filetypes? Outlook emails? Contacts? You need to be more specific.

It's a list of data that's in the body of an Outlook email - I know I can copy and paste, but I was wondering if there was some way that it could just "do it"..... Am I dreaming?

This will take a little work. Open Notepad, copy and paste the data to the open notepad window, separate the items by a comma or a tab. Then, save the file as a csv file and open it from Excel.
If the data is already in a list, with a hard return between each entry, you won't have to use the commas. If there is more than one word on each line, and you want those words to be in separate fields in Excel, then you will have to insert a comma between each one, or enter a hard return after each one after pasting into Notepad.
