Labels are a means of naming a cell or range of cells so that you can easily refer to them.

For example, let' say you have a cell (A1) that contains the annual percentage rate (APR) that is used in many formulas in the spreadsheet. You could use A1 in your formulas, but that can cause problems when moving or copying the formulas. Plust it is not very readable. So instead, you apply a NAME to cell A1 called APR.

Now whenever you need the APR value in a formula you just use 'APR' instead of 'A1'.

Labels are similar, but they are references to multiple cells. For instance, if you had data in 12 columns, one for each month. You could createa a label for each column: January, February, etc. Then to get the sum of all the numbers in the January column you would use =SUM(January).

You use the 'Define' command to create a Named cell or to edit Name or Labels. You use the 'Paste' command to paste a Name or label into a formula if you are too lazy to type it yourself. The create allows you to create Labels for existing tables. The apply command lets you replace references. The Label lets you create a custom label for any range of cells you want.

Additionally, If the top cell in a column is named as noted above, such as Jan, Feb...
then Excel will see and refer to those names as the column's label.
