I have an Excel spreadsheet with number formatting that I want to clear. But, when I format it back to "General" or "Text" it destroys the data. Eg. I want to take a current cell with formatted data like "34.5%" and turn it into just "34.5" But, when I format it, it turns it into .00345 or something like that. How can I reformat this spreadsheet without hindering the data??

If your Excel formatting is indeed turning 34.5% into .00345, then you do have a problem. 34.5% in decimal format is .345.
If you change the format of a cell that contains a number, it will indeed change the appearance of that value, but it will not change the value. It may convert the percentage to decimal, or a date to Excel's five digit equivalent, but it will not change the value of that data.
So, the answer to your question is, you're not hindering your data by changing the formatting. If you don't want the appearance of the data to change, then don't change the format of the cell after you've entered the information. Format the cell BEFORE you enter the data. Then it will have the appearance you wish.
