For the most part, I sign as the moderator when I've edited the body or title of the post as an indication to the OP that the changes were made by someone with the (dare I say it?) "authority" to make those changes.
I wouldn't want the OP to think that any member of the forum can make those types of changes.
In general, when I'm acting and responding as the moderator, I let the OP know. When I'm just another member offering a solution, I don't feel that there is a need to include the fact that I'm the moderator.
I handle that the same way I handle communications in my real life. Sometimes I'm Coach DerbyDad03, sometimes I'm (my professional title) DerbyDad03 and sometimes I'm just DerbyDad03.
I'm torn as to how to sign this particular post ;-)
