Editing text without erasing characters in OO

Specs: Windows 7 Premium, 1.794 GHz / 1982 MB
I have posted help on this topic before, but I can see that my ability to describe what my problem has been was not very successful.

Over the past 20 years I have had this problem almost a dozen times and in between the instances that this problem occurs, I have always forgotten how to solve this problem other than to start a new document.

I don't know how at the end of the document that I am currently editing has changed, but for some reason when I am editing text, the document will allow me to add additional text at the cost of loosing one character ahead of where I am editing.

This is a problem as I do not want to re type the sentence/paragraph.

How can I resolve this and is there a name for this so that if I ever have a problem I might be able to remember what this edit glitch is called?

Possibly Insert Mode vs Overwrite Mode?
I don't use OO so can't help much more.
