When not to use Spanning-Tree?

When should you not use Spanning-Tree? All I use my switch for is a basic star network. The router and desktops only connect to that one switch. So should I disable Spanning-Tree? Since it isn't a bridged network.

Like I thought, I guess there is little point for spanning-tree in a single star network. Since there is no redundancy or possibility of looping. Am I right?

Exactly. You need more than one switch to create a loop. With a single switch, STP is moot.
