visually spotting Cat 5 & 6.

Assuming they're both wrapped in blue plastic, is there any way to physically tell the difference between Cat5e and Cat6 cable?

All the Ethernet cable I have ever seen has had the cable specification written on the plastic sleeve.

If its not written on the sleeve there is no telling what you have got except some cheap cable of some sort.

Cat 6 also tends to be slightly thicker and less flexible due to a plastic divider that runs through the center of the cable.
